焯水与氽水的区别是什么？
焯水与氽水的区别在于将食材加工的程度不一样。焯水要将食材加热至半熟或全熟，而氽水只需把材料进行加热处理。具体区别如下：
焯水（chāo shuǐ）是指将初步加工的原料放在开水锅中加热至半熟或全熟，取出以备进一步烹调或调味。东北地区称为“紧”，河南一带称为“掸”，四川则称为“泹”，广东称为“灼”。
氽水（tǔn shuǐ）又称灼水或拖水，是烹调前把材料进行加热处理的烹调技巧。“氽”是漂在水上的意思。在烹饪里，“氽”的做法即油炸（把食物放在油锅里炸时，它会浮起来）。
汆水是什么意思？
一种做菜手法 就是将食材放到沸水中滚烫一下。我们这就有汆肉米线。。。。
焯水与汆水是一回事吗？
不知道我的理解对不对。
我的理解是，焯水是冷水下锅，大火煮到水滚，一般是处理肉类食品。
汆水就是水烧滚了之后把食材放水里稍微烫煮一下就捞出来，一般是处理蔬菜。
